Ingredients
1½ cups plain Greek yogurt (full-fat recommended)
4 large eggs
5 tablespoons cornstarch (or tapioca flour/almond flour as alternatives)
Instructions
Preheat the oven to 350°F (175°C). Line a small cake pan or springform with parchment paper.
In a large bowl, whisk together the Greek yogurt, eggs, and cornstarch until smooth and creamy.
Pour the batter into the prepared pan and smooth the top.
Bake for 35-40 minutes until the edges are set and the center jiggles slightly.
Cool completely in the pan, then refrigerate for at least 2 hours before serving.
