Ingredients
3 very ripe bananas (mashed)
1 cup full-fat or low-fat cottage cheese
2 large eggs
1 ½ cups all-purpose or whole wheat flour
¼ cup maple syrup or honey
1 tsp baking soda
½ tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
¼ tsp salt (optional)
Optional Add-ins: ½ cup walnuts, ½ cup dark chocolate chips
Instructions
Preheat oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan.
Mash the bananas in a large bowl until smooth.
Add cottage cheese, eggs, maple syrup (or honey), and vanilla extract. Whisk until well combined.
In a separate bowl, mix dry ingredients: flour, baking soda, baking powder, cinnamon, and salt.
Gently fold the dry mixture into the wet ingredients. Do not overmix.
Optional: Fold in chopped walnuts or chocolate chips.
Pour batter into the prepared pan and smooth the top.
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
