Banana Bread with Cottage Cheese

  • 3 very ripe bananas (mashed)

  • 1 cup full-fat or low-fat cottage cheese

  • 2 large eggs

  • 1 ½ cups all-purpose or whole wheat flour

  • ¼ cup maple syrup or honey

  • 1 tsp baking soda

  • ½ tsp baking powder

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • ¼ tsp salt (optional)

  • Optional Add-ins: ½ cup walnuts, ½ cup dark chocolate chips


Instructions

  • Preheat oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan.

  • Mash the bananas in a large bowl until smooth.

  • Add cottage cheese, eggs, maple syrup (or honey), and vanilla extract. Whisk until well combined.

  • In a separate bowl, mix dry ingredients: flour, baking soda, baking powder, cinnamon, and salt.

  • Gently fold the dry mixture into the wet ingredients. Do not overmix.

  • Optional: Fold in chopped walnuts or chocolate chips.

  • Pour batter into the prepared pan and smooth the top.

  • Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.

  • Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
