- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- ½ teaspoon cinnamon
- ¼ teaspoon cloves
- 1 stick unsalted butter, softened
- 1 cup sugar
- 1 egg
- ½ cup crystallized ginger, chopped
- ¼ cup molasses
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine flour, baking soda, ginger, cinnamon, and cloves.
- In another bowl, cream the butter and sugar until light and fluffy. Add the egg and molasses, then mix well.
- Gradually add the dry ingredients to the wet mixture, stirring to combine.
- Fold in the chopped crystallized ginger.
- Roll the dough into balls, then roll them in sugar. Place them on a baking sheet and bake for 10-12 minutes.
- Allow the cookies to cool on a wire rack and enjoy!
