Ingredients

  • 2 cups thinly sliced English cucumbers (or Persian cucumbers)

  • 1 cup diced fresh pineapple (or canned, drained)

  • Juice of 1 lime

  • 1 teaspoon honey or maple syrup (optional)

  • ¼ teaspoon chili flakes (adjust to spice preference)

  • 2 tablespoons chopped fresh mint leaves

  • Pinch of sea salt

  • Optional: 1 tablespoon red onion, thinly sliced


Instructions

  • Prepare the cucumbers: Wash and thinly slice cucumbers into rounds or half-moons. Pat dry with a paper towel.

  • Dice the pineapple: Cut fresh pineapple into small chunks. If using canned, drain completely to prevent excess liquid.

  • Mix dressing: In a small bowl, whisk together lime juice, honey, chili flakes, and a pinch of salt.

  • Combine ingredients: In a large mixing bowl, combine cucumbers, pineapple, mint, and optional red onion. Pour dressing over and toss gently.

  • Chill & serve: Refrigerate for 20–30 minutes to let flavors meld. Serve cold and fresh.
