This Cucumber Salad is a refreshing, sweet, and spicy twist on the classic cucumber salad recipe. It’s perfect for summer barbecues, quick lunches, or a tropical side dish
Ingredients
2 cups thinly sliced English cucumbers (or Persian cucumbers)
1 cup diced fresh pineapple (or canned, drained)
Juice of 1 lime
1 teaspoon honey or maple syrup (optional)
¼ teaspoon chili flakes (adjust to spice preference)
2 tablespoons chopped fresh mint leaves
Pinch of sea salt
Optional: 1 tablespoon red onion, thinly sliced
Instructions
Prepare the cucumbers: Wash and thinly slice cucumbers into rounds or half-moons. Pat dry with a paper towel.
Dice the pineapple: Cut fresh pineapple into small chunks. If using canned, drain completely to prevent excess liquid.
Mix dressing: In a small bowl, whisk together lime juice, honey, chili flakes, and a pinch of salt.
Combine ingredients: In a large mixing bowl, combine cucumbers, pineapple, mint, and optional red onion. Pour dressing over and toss gently.
Chill & serve: Refrigerate for 20–30 minutes to let flavors meld. Serve cold and fresh.
