3 ripe bananas
¾ cup cottage cheese
2 eggs
1½ cups flour (whole wheat or AP)
1 tsp baking soda
½ tsp baking powder
½ tsp cinnamon
1 tsp vanilla extract
Pinch of salt
Instructions
Preheat oven to 350°F. Grease or line a loaf pan.
Mash bananas. Whisk in eggs, vanilla, and cottage cheese.
In another bowl, mix dry ingredients.
Combine wet and dry mixtures. Fold gently.
Pour into pan. Bake for 55–65 minutes.
Cool before slicing and serving.
