This creamy, cheesy keto tuna casserole is low-carb, easy to make, and perfect for busy weeknights. Made with just 5 simple ingredients!
Ingredients
2 cans tuna (drained)
1.5 cups shredded cheddar cheese
½ cup cream cheese or sour cream
2 cups zucchini noodles or cauliflower
1 large egg
Salt, pepper, garlic powder (to taste)
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, combine drained tuna, cream cheese or sour cream, beaten egg, shredded cheese (reserve half for topping), and chopped veggies (zoodles or cauliflower).
Season with salt, pepper, garlic powder, and any other preferred spices. Mix until creamy and well combined.
Transfer the mixture to a greased 9×9 casserole dish and spread evenly.
Sprinkle the remaining cheese on top.
Bake uncovered for 20–25 minutes until bubbly and golden on top.
Let rest 5–10 minutes before serving.
