2 medium sweet potatoes (cubed)
1 tbsp olive oil
1/2 tsp cumin
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp sea salt
1/4 tsp black pepper
1/2 cup black beans
1/2 cup corn
1/2 avocado (sliced)
1/2 cup cherry tomatoes
1 cup shredded romaine
Lime wedges, to serve
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Toss cubed sweet potatoes with olive oil and seasonings.
Roast for 25–30 minutes, flipping halfway.
Assemble bowls: layer greens, roasted sweet potatoes, beans, corn, tomatoes, avocado.
Top with lime juice and optional sauce.
